Rice Pudding  . . .

I started my day by making Bruce a rice pudding. On a Thursday, I attend an afternoon session at my wood turning club and then stay in town to also attend the evening session as well. I leave Bruce a meal prepared, but today he also thought coming home to a rice pudding would be a great idea. Because a rice pudding needs to cook slowly to make it creamy, I needed to have it in the oven by 6.30am. While the pudding cooked, I did my house and farm chores and wrapped Kelly's birthday present.


Rice Pudding Recipe . . .

600 ml milk
4 tablespoon rice
tablespoon sugar
1 teaspoon vanilla extract
Nutmeg

Put the milk into an oven proof dish.
Wash the rice and put it into the milk, along with the sugar and vanilla.
Grate nutmeg over the top - you can use ground nutmeg if you prefer.
Bake for at least 3 hours at 120°C.
Stir 2 - 3 times while cooking.
It is the long slow cooking that makes the pudding creamy.
Can be reheated in the microwave if required.

Happy Pigs enjoying their Subway bread for breakfast. Bread in the morning and vegetables at night. These are Wessex Saddleback piglets, they are 5 months old. We seem to like animals with white bands around them.
